Mini Chocolate Chip Cookie Bites

My daughter put in a special request today for tiny chocolate chip cookies and tiny cupcakes (I finally found a tiny cupcake tin (smaller than a mini) at a local kitchen supply store so it’s a frequent request at our house). Since I love all things mini I decided why not, especially if it means I get to eat chocolate chip cookies. I also recommend using mini chocolate chips so they don’t overwhelm the tiny cookies.

I have to tell you, these are definitely one of my new favorite ways to enjoy chocolate chip cookies. They are just so pop-able and incredibly hard to resist!

You’ll think, okay I eat like 10 (that sounds like a lot, but remember these are bite-size), but no way is that going to happen. I set 10 in front of me but then just kept reaching for more and quickly lost count.

So yes, these are quite dangerous. Not to mention they taste like the perfect chocolate chip cookie. They are soft, chewy, and moist and they have a generous amount of chocolate (which is always a must right?).  I used to always be into the large bakery-size chocolate chip cookies but now I’ve finally met my match.

This chocolate chip cookie recipe does make a ton, but remember they are tiny so you still just might want to double it especially if you are making these to take to a party. You can never have too many mini chocolate chip cookies!

I recommend having someone help you roll these just to make things go faster since there are so many (one person can handle the cookie scoop, and the other person can roll the cookie dough balls and place balls on the silicone mat or cookie sheet). Allowing the cookie dough to chill will make it easier to shape, but room temperature is ok too.

If you have kids around, I promise you they’ll love to help. A rubber spatula is easy to use for placing them on the baking trays and removing them after cooling. My kids couldn’t get enough of these. The highlight of their day for sure! Mine too :).

I’m itching to layer some ice cream between these tiny cookies for bite-sized ice cream sandwiches!

Chocolate Chip Cookie Bites

These are the funnest tiniest chocolate chip cookies you'll ever have! They're perfectly poppable and incredibly irresistible and people of every age will love them! Makes approx. 144 bites.

  • Preheat oven to 350 degrees. In a mixing bowl whisk together flour, cornstarch, baking soda and salt for 20 seconds, set aside.
  • Place butter in a microwave safe bowl, heat in microwave on HIGH power until butter has melted halfway. Remove and whisk until fully melted. Pour butter into the bowl of an electric stand mixer.
  • Add brown sugar and granulated sugar, fit mixer with paddle attachment and blend mixture on medium speed until well combined. Mix in egg and vanilla extract. With mixer set on low speed, slowly add in dry ingredients and mix until combined. Stir in chocolate chips.
  • Scoop dough out a slightly heaping 1/2 tsp at a time and drop onto plates (wax paper, whatever). Shape each into a ball, then if desired press 3 - 4 more chocolate chips into top (totally optional, mostly for looks...and more chocolate).
  • Align on two parchment paper or silicone baking mat lined baking sheets, spacing 1-inch apart. Bake in preheated oven about 5 - 6 minutes (they should still fill soft and slightly under-baked, they will continue to cook slightly once removed from oven so carefully not to over-bake).
  • Remove from oven and cool on baking sheet several minutes then transfer to a wire rack to cool. Store in an airtight container.

      You could try adding a little more flour and chilling the dough and that should help, sorry that happened!

      That would be fine to chill it, depending on how long you chill it you may want to let it rest at room temp a bit before scooping and baking so the cookies will still spread a little. I’m so glad you liked the single chocolate chip cookie recipe :).

      Refrigerating should be fine, you may just want to let the dough rest at room temp a bit before baking though so they still spread out. I’m so glad you liked the big chocolate chip cookie!

      Basically like any other cookie. Sorry they didn’t turn out, something may have been mis-measured.

        i just made these and wondered the same thing. the melted butter makes the have an almost goey consistency. i’m pretty sure i measured everything right. i also made the dough twice in a row and it still came out so soft that the dough wouldn’t form a ball like yours did. :( Please help! did you refrigerate it a while before scooping and forming balls, or can i just use softened butter or room temperature butter instead of melted? will the cookie still come out same? i also can’t tell how big the finished cookie is supposed to be. i feel like mine spread out too much.

          Most likely it’s just a difference in the way the flour is measured, for these I simply scooped and leveled from the flour container (I didn’t fluff or sift flour first). If you live in high humidity you may need a little more flour and refrigerating the dough will help them spread less. Hopefully something there helps!

    Love this recipe! my son and I made these for the first time yesterday. Perhaps it’s due to elevation or something, we live in Canada but we had to cook them for 11 minutes (and even then they were not very golden). We got about 4 dozen, but ours were 2 bites because I didn’t realize the chipits should have been mini until reading through the comments and if they were too tiny the chip fell out. They were DELICIOUS though!! On your Pinterest post it says to add 4 1/8 tsp of baking soda and on your website it says to add 1/4 + 1/8, so now I’m wondering which measurement is correct ? I’m about to bake them again this morning because…the first batch was devoured by my sons and their cousins! My son wants to add mint chocolate chips in today’s batch. :-) thanks for sharing this recipe. I can see we will be baking it more often now.

      Yeah I don’t know why Pinterest would have put that, it’s 1/4 + 1/8. If it were 4 whole tsps they wouldn’t taste good, you’d really be able to taste the baking soda :). I’m glad you family liked these!
